I have an enumerate list, then some text comes, and then I want to continue with the list. How do I get LaTeX to continue with the correct number for the next item?

This can easily be done using the enumitem package, for example:

\documentclass[12pt]{article}
\usepackage{enumitem}
\begin{document}
\begin{enumerate}
  \item One
  \item Two
  \end{enumerate}
Some text
\begin{enumerate}[resume]
  \item Three
\end{enumerate}
\end{document}

Output:

list output

Alternatively, the package mdwlist provides the commands \suspend and \resume for temporarily ending a list and restarting it.
